Ingredients

Scale

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup plain yogurt (whole or low-fat)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cut into small pieces

Instructions

  1. Prepare the batter: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, beat the eggs, then add the sugar, yogurt, and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to create a smooth batter.
  2. Make the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cold butter pieces and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  3. Layer the cake and streusel: Pour half of the batter into a greased 9-inch square or round baking pan. Sprinkle half of the streusel topping evenly over the batter. Add the remaining batter and top with the remaining streusel.
  4. Bake the cake: Preheat your oven to 350°F (175°C). Bake the assembled cake for 40-45 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown.
  5. Cool and serve: Allow the cake to cool in the pan for about 15 minutes before slicing. Serve warm or at room temperature for best flavor and texture.

Notes

  • You can substitute Greek yogurt for plain yogurt to increase protein content and create a denser texture.
  • For a gluten-free version, use a gluten-free flour blend that measures cup-for-cup like all-purpose flour.
  • Adding chopped nuts such as walnuts or pecans to the streusel topping adds extra crunch.
  • Ensure the butter for streusel is cold to achieve a crumbly topping rather than a melt.
  • Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days.
