Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente, usually about 7 to 8 minutes. Drain and set aside.
  2. Make the cheese sauce: In the same pot, melt the butter over medium heat. Sprinkle the flour into the melted butter and whisk continuously for about 1 to 2 minutes to form a roux, cooking out the raw flour taste. Gradually whisk in the milk, continuing to whisk until the mixture thickens and begins to bubble gently, about 5 minutes.
  3. Add cheese and seasoning: Reduce the heat to low and add the shredded white cheddar cheese, stirring constantly until the cheese is fully melted and the sauce is smooth. Stir in the Cajun seasoning, and season with salt and black pepper to taste. Adjust the amount of Cajun seasoning based on your spice preference.
  4. Combine pasta and sauce: Add the cooked macaroni back into the cheese sauce and stir until all the pasta is evenly coated with the creamy, spicy sauce. Heat through for 1 to 2 minutes.
