- 1 cup basmati rice
- 2 cups water
- 3 tablespoons fresh lemon juice
- 1 tablespoon vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1–2 dried red chilies (optional)
- 1/4 teaspoon turmeric powder
- 1 tablespoon chopped fresh cilantro

- Cook the Rice: Rinse the basmati rice thoroughly under cold running water to remove excess starch. In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring it to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Prepare the Lemon Seasoning: While the rice is cooking, heat the vegetable oil in a small pan over medium heat. Add the mustard seeds and cumin seeds; let them sizzle until they start to pop. Then add dried red chilies if using, and turmeric powder. Stir for a few seconds to release their flavors.
- Toss Rice with Lemon and Spices: Transfer the cooked rice to a large mixing bowl. Pour the hot tempered spices over the rice, add fresh lemon juice, and salt to taste. Mix gently but thoroughly to combine all flavors evenly.
- Garnish and Serve: Sprinkle chopped fresh cilantro over the lemon rice. Serve warm or at room temperature as a standalone dish or paired with a side of vegetables or dal.
