Ingredients

Scale

Pie Dough

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup vegetable shortening or vegan butter, cold
  • 68 tablespoons ice-cold water

Blueberry Filling

  • 2 cups fresh blueberries
  • ⅓ cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Prepare the Dough: In a large bowl, whisk together the flour and salt. Cut in the cold shortening or vegan butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice-cold water, one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the Filling: In a medium bowl, combine the blueberries, sugar, lemon juice, and cornstarch if using. Toss gently to coat the berries and set aside to macerate for 10-15 minutes.
  3. Roll Out the Dough: On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Use a round cutter, about 4-5 inches in diameter, to cut out circles.
  4. Assemble the Hand Pies: Spoon about 2 tablespoons of blueberry filling onto one half of each dough circle, leaving a small border around the edge. Brush the edges with a little water, then fold the dough over to create a half-moon shape. Press the edges firmly with a fork to seal.
  5. Bake the Hand Pies: Preheat the oven to 375°F (190°C). Place the hand pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the crust is golden brown and crisp.
  6. Cool and Serve: Allow the hand pies to cool slightly on a wire rack before serving. Enjoy warm or at room temperature.

Notes

  • For a sweeter filling, you can add an extra tablespoon of sugar.
  • Adding cornstarch helps thicken the filling and prevents it from leaking out during baking.
  • Brush the tops of the hand pies with a little plant-based milk before baking for a golden finish.
  • These hand pies can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
  • Use fresh or frozen blueberries; if using frozen, thaw and drain excess liquid before filling.
