5 from 101 reviews

This classic Slow Cooker Pot Roast recipe features a tender beef chuck roast slow-cooked to perfection with hearty potatoes, carrots, and onions in a savory beef broth. The slow cooking method ensures the meat becomes incredibly tender while the vegetables absorb rich flavors, making it a comforting and satisfying meal perfect for any day.

Ingredients

Scale

Meat

  • 3 to 4 lbs beef chuck roast

Vegetables

  • 4 medium potatoes, peeled and quartered
  • 4 large carrots, peeled and cut into chunks
  • 1 large onion, sliced

Liquids and Seasonings

  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Prepare Ingredients: Peel and chop the potatoes and carrots into chunks and slice the onion. Season the beef chuck roast generously with salt, pepper, garlic powder, thyme, and rosemary on all sides.
  2. Assemble in Slow Cooker: Place the seasoned beef chuck roast in the bottom of the slow cooker. Surround the roast with the chopped potatoes, carrots, and sliced onion. Pour the beef broth evenly over the top to ensure moisture during cooking.
  3. Cook the Roast: Cover the slow cooker with its lid and cook on low heat for 8 to 10 hours, or on high for 4 to 6 hours, until the beef is tender and easily pulls apart with a fork.
  4. Serve: Once cooked, carefully remove the roast and vegetables from the slow cooker. Slice or shred the beef as desired and serve hot with the cooked vegetables and some of the flavorful broth ladled over.

Notes

  • For a thicker gravy, remove some cooking liquid and mix with cornstarch before adding back to the slow cooker.
  • Use a meat thermometer to ensure the internal temperature of the roast reaches at least 145°F for safe consumption.
  • Feel free to add other root vegetables like parsnips or turnips for added variety.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
