Tofu and Pineapple

  • 14 oz firm tofu, drained and cut into cubes
  • 1 cup pineapple chunks (fresh or canned, drained)

Sauce and Flavorings

  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons oil (vegetable or canola oil)

Instructions

  1. Pan-fry the tofu: Heat 1 tablespoon of oil in a non-stick skillet over medium-high heat. Add the cubed tofu in a single layer and cook for about 4-5 minutes on each side until all sides are golden brown and crispy. Remove the tofu from the skillet and set aside.
  2. Sauté garlic and ginger: In the same skillet, add the remaining 1 tablespoon of oil. Lower heat to medium and add minced garlic and ginger. Sauté for 1-2 minutes until fragrant but not burnt.
  3. Add pineapple and soy sauce: Add the pineapple chunks to the skillet and pour in the soy sauce. Stir to combine and let the pineapple cook for 3-4 minutes, allowing it to soften slightly and the sauce to reduce a bit.
  4. Return tofu to pan: Place the fried tofu back into the skillet with the pineapple and sauce. Gently toss to coat the tofu in the glaze.
  5. Finish cooking: Cook for an additional 2-3 minutes, stirring occasionally, until the tofu is heated through and well coated with the pineapple soy glaze.
