Brownie Base
- 1 box strawberry cake mix with pudding in the mix (We used Pillsbury)
- 2 large eggs
- 1/3 cup vegetable or canola oil (80 ml)
- 1 teaspoon vanilla extract (5 ml)
Strawberry Brownie Frosting
- 3/4 cup powdered sugar (90g)
- 2 tablespoon strawberry preserves (40g – Bonne Maman strawberry preserves recommended)
- 1 ½ tablespoons milk (22 ml)
- 1 tablespoon cream cheese (15g, optional)
- Preheat and Prepare the Baking Pan: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease an 8×8 inch baking pan with nonstick spray or line it with parchment paper or foil to prevent sticking. Set aside.
- Mix the Brownie Batter: In a large bowl, combine the strawberry cake mix, eggs, vegetable or canola oil, and vanilla extract. Mix well using a spoon or electric mixer until all ingredients are fully incorporated.
- Bake the Brownies: Pour and press the batter evenly into the prepared baking pan. Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center comes out just clean. Remove from the oven and let the brownies cool completely in the pan.
- Prepare the Frosting: In a small bowl, whisk together the powdered sugar, strawberry preserves, milk, and cream cheese if using. Mix until smooth and creamy.
- Frost the Brownies: Once the brownies have cooled, spread the strawberry frosting evenly over the top. Allow the frosting to set for a few minutes before slicing and serving.
