These Strawberry Brownies are a delicious twist on classic brownies, made with strawberry cake mix and topped with a luscious strawberry cream cheese frosting. They are easy to prepare, baked to perfection with a soft and moist texture, and deliver a burst of strawberry flavor that’s perfect for any occasion.

Ingredients

Scale

Brownie Base

  • 1 box strawberry cake mix with pudding in the mix (We used Pillsbury)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)

Strawberry Brownie Frosting

  • 3/4 cup powdered sugar (90g)
  • 2 tablespoon strawberry preserves (40g – Bonne Maman strawberry preserves recommended)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15g, optional)

Instructions

  1. Preheat and Prepare the Baking Pan: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease an 8×8 inch baking pan with nonstick spray or line it with parchment paper or foil to prevent sticking. Set aside.
  2. Mix the Brownie Batter: In a large bowl, combine the strawberry cake mix, eggs, vegetable or canola oil, and vanilla extract. Mix well using a spoon or electric mixer until all ingredients are fully incorporated.
  3. Bake the Brownies: Pour and press the batter evenly into the prepared baking pan. Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center comes out just clean. Remove from the oven and let the brownies cool completely in the pan.
  4. Prepare the Frosting: In a small bowl, whisk together the powdered sugar, strawberry preserves, milk, and cream cheese if using. Mix until smooth and creamy.
  5. Frost the Brownies: Once the brownies have cooled, spread the strawberry frosting evenly over the top. Allow the frosting to set for a few minutes before slicing and serving.

Notes

  • Using cream cheese in the frosting is optional but adds a delightful creamy texture and tangy flavor.
  • Make sure the brownies are completely cooled before frosting to prevent the frosting from melting.
  • You can substitute vegetable oil with canola or light olive oil if preferred.
  • For a more intense strawberry flavor, use high-quality strawberry preserves like Bonne Maman.
  • These brownies can be stored covered at room temperature for up to 2 days or refrigerated for up to 5 days.
