Shrimp Marinade
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
Mango Salsa
- 1 large mango, diced
- 1/2 cup tomatoes, chopped
- 1/4 cup red onion, finely diced
- 2 tbsp cilantro, chopped
- 2 tbsp lime juice (divided)
Lime-Chili Sauce
- 1/2 cup Greek yogurt or mayo
- 1 tbsp chili sauce or sriracha
Additional
- 1 ripe avocado, sliced
- 2 cups cooked rice
- Marinate the Shrimp: Toss the peeled and deveined shrimp with olive oil, garlic powder, paprika, and salt in a bowl. Let the shrimp marinate for 15 minutes to absorb the flavors.
- Prepare the Mango Salsa: In another bowl, combine the diced mango, chopped tomatoes, finely diced red onion, chopped cilantro, and 1 tablespoon of lime juice. Mix well and chill the salsa in the refrigerator until ready to serve to let the flavors meld.
- Grill the Shrimp: Heat a grill or grill pan over medium-high heat. Place the marinated shrimp on the grill and cook for 2 to 3 minutes on each side, or until the shrimp are cooked through and slightly charred for extra flavor.
- Make the Lime-Chili Sauce: Mix the Greek yogurt or mayo with the remaining 1 tablespoon of lime juice and chili sauce (or sriracha) until smooth. Taste and adjust the spice level if desired by adding more chili sauce.
- Assemble the Bowls: In serving bowls, layer the cooked rice as the base. Arrange the grilled shrimp on top, then add slices of ripe avocado and a generous scoop of the chilled mango salsa. Drizzle everything with the prepared lime-chili sauce and serve immediately for a fresh and delicious meal.
Notes
- You can substitute shrimp with grilled chicken or tofu for a different protein option.
- Use brown rice or quinoa instead of white rice for a healthier grain choice.
- Adjust chili sauce quantity according to your preferred heat level.
- For a dairy-free version, use vegan mayo instead of Greek yogurt.
- Make the mango salsa ahead of time to allow flavors to develop even more.
