Instructions

  1. Prepare the vegetables: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the sliced cabbage, season with salt and pepper, and continue to cook, stirring occasionally, until cabbage is soft and slightly caramelized, about 10-12 minutes. Remove from heat and let cool slightly.
  2. Make the batter: In a mixing bowl, whisk the eggs until smooth. Gradually add the flour, whisking continuously to avoid lumps. Season the batter lightly with salt and pepper. The batter should be slightly thick but pourable.
