Broccoli Fritters

  • 3 cups broccoli florets and stem, roughly chopped into 2cm/1 inch pieces (about 1 medium head of broccoli)
  • 2 tbsp oil (vegetable, olive oil, or canola)
  • 1 garlic clove, minced
  • 1/2 cup plain flour
  • 1/4 cup grated parmesan
  • 1 egg
  • 2 tbsp milk (low fat or full fat)
  • 1/2 tsp salt
  • Black pepper, to taste

Yoghurt Sauce

  • 1/4 cup plain yoghurt
  • 2 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare Broccoli: Steam or boil the broccoli until it is tender but not mushy, about 3 minutes using a microwave steamer or until easily pierced with a fork. Drain well.
  2. Mash Broccoli: Use a potato masher to gently crush the broccoli so it holds together when cooked but isn’t completely smooth. This helps create a smooth surface on the fritters.
  3. Make Yoghurt Sauce: In a small bowl, combine plain yoghurt, lemon juice, salt, and pepper. Mix well and set aside to serve with the fritters.
  4. Prepare Batter: Lightly beat the egg in a bowl with a fork. Add flour, minced garlic, grated parmesan, milk, salt, and black pepper. Stir until well combined; the batter will be thick.
  5. Add Broccoli to Batter: Mix the mashed broccoli into the batter evenly. The broccoli’s moisture will loosen the batter slightly.
  6. Heat Oil: Heat 1 tablespoon of oil in a frying pan over medium heat, ensuring the pan is well coated.
  7. Cook Fritters: Scoop 1/4 cup portions of batter into the pan. Gently flatten each portion with a spoon to about 1cm (1/3 inch) thickness. Cook 3 fritters at a time.
  8. Fry Until Golden: Cook each side for 2 to 3 minutes or until golden brown and crispy. Flip carefully to avoid breaking.
  9. Serve: Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm with the prepared yoghurt sauce and optional lemon wedges for extra zest.
