Ingredients

Scale

Steak and Sauce

  • 1 lb (450g) steak (such as sirloin or ribeye)
  • 2 tbsp miso paste (white or yellow)
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil

Noodle Salad

  • 6 oz (170g) cooked noodles (such as soba, ramen, or rice noodles)
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers (red, yellow, or green)
  • 1/2 cup chopped cucumber
  • 2 green onions, sliced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Prepare the Miso Sauce: In a small bowl, mix the miso paste and soy sauce together until smooth. Set aside.
  2. Cook the Steak: Heat the vegetable oil in a skillet over medium-high heat. Pat the steak dry and season lightly with salt and pepper. Add the steak to the hot skillet and cook for about 3-4 minutes per side for medium-rare, or adjust time to your preferred doneness.
  3. Glaze the Steak: During the last minute of cooking, brush the miso-soy sauce mixture over both sides of the steak. Let it caramelize slightly, turning once to coat evenly.
  4. Rest and Slice Steak: Remove the steak from the skillet and let it rest for 5 minutes to retain juices. Then slice thinly against the grain.
  5. Prepare the Noodle Salad: In a large bowl, combine the cooked noodles, shredded carrots, sliced bell peppers, chopped cucumber, and green onions. Drizzle with rice vinegar and sesame oil, and toss gently to combine. Season with salt and pepper to taste.
  6. Assemble the Dish: Plate a generous portion of the noodle salad and top with sliced miso-glazed steak. Garnish with sesame seeds if desired and serve immediately.

Notes

  • For best flavor, use fresh miso paste and high-quality soy sauce.
  • You can substitute the steak with chicken or tofu for a different protein option.
  • Allow the steak to rest before slicing to ensure juicy meat.
  • Use your favorite type of noodles: soba for a nutty flavor, rice noodles for gluten-free, or ramen for chewiness.
  • Adjust the miso and soy sauce quantities according to taste preference for saltiness and umami.
