Quesadilla Ingredients
- 4 large flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil or butter, for cooking
- Prepare the filling: In a bowl, combine chopped spinach, crumbled feta, shredded mozzarella, and thinly sliced red onion. Mix evenly to distribute the ingredients well.
- Assemble the quesadillas: Lay one tortilla flat on a clean surface. Spread about a quarter of the filling mixture evenly over half of the tortilla. Fold the other half over to create a half-moon shape.
- Cook the quesadillas: Heat a skillet or frying pan over medium heat and add a small amount of olive oil or butter. Place the folded quesadilla in the pan and cook for 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese inside has melted completely.
- Serve: Remove the quesadilla from the pan and let it cool for a minute before slicing into wedges. Repeat with remaining tortillas and filling. Serve warm.
Notes
- Use whole wheat or corn tortillas for a healthier or gluten-free variation.
- For extra flavor, add a sprinkle of oregano or crushed red pepper flakes to the filling.
- To make it vegetarian, ensure cheeses used are rennet-free.
- Serve with salsa, tzatziki, or a side salad for a balanced meal.
