5 from 116 reviews

This elegant London Fog Cake is a delightful treat inspired by the classic Earl Grey tea latte. Infused with the fragrant bergamot notes of Earl Grey tea and a hint of vanilla, this moist and tender cake is perfect for tea time or any special occasion.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 2 large eggs
  • ¾ cup whole milk infused with 3 Earl Grey tea bags
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Infuse the tea: Heat the milk until warm and steep 3 Earl Grey tea bags in it for about 10 minutes to extract the full flavor. Remove the tea bags and set infused milk aside to cool slightly.
  2. Prepare the batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs with the infused milk, melted butter, and vanilla extract until combined.
  3. Combine ingredients: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined without overmixing, to ensure a tender crumb.
  4. Bake the cake: Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. Pour the batter evenly into the pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a stronger tea flavor, use more tea bags or steep longer.
  • Ensure not to overmix the batter to keep the cake light and fluffy.
  • Let the cake cool completely before frosting or serving for the best texture.
