- 2 large eggs
- ¾ cup whole milk infused with 3 Earl Grey tea bags
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Infuse the tea: Heat the milk until warm and steep 3 Earl Grey tea bags in it for about 10 minutes to extract the full flavor. Remove the tea bags and set infused milk aside to cool slightly.
- Prepare the batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs with the infused milk, melted butter, and vanilla extract until combined.
- Combine ingredients: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined without overmixing, to ensure a tender crumb.
- Bake the cake: Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. Pour the batter evenly into the pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
