  • 1/4 cup onion, thinly sliced

Instructions

  1. Prepare the vegetables: Thinly slice the bell peppers and onions. Rinse and pat dry the fresh spinach leaves.
  2. Assemble the sandwich: On one slice of bread, layer the cheese slices, then add the bell peppers, spinach, and onions. Top with the second slice of bread.
  3. Grill the sandwich: Heat a skillet or griddle over medium heat. Place the sandwich on the skillet and cook for 3-4 minutes until the bottom bread is golden brown.
