Instructions

  1. Prepare the dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, key lime juice, and vanilla extract, mixing well to combine. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet mixture until a smooth dough forms.
  2. Shape the cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoons of dough and roll them into balls. Place them on the baking sheet and gently flatten each ball slightly with the palm of your hand or the bottom of a glass to form cookie shapes.
