This Keto Maple Syrup is a low-carb, sugar-free alternative to traditional maple syrup, perfect for those following a ketogenic diet. Ideal for drizzling over pancakes, waffles, or desserts without the guilt of added sugars.

Ingredients

Scale

Dry Ingredients

  • 1 cup Swerve brown sugar substitute
  • 1 teaspoon xanthan gum

Wet Ingredients

  • 2 cups warm water (divided)
  • 1 ½ tablespoons maple extract
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Xanthan Gum Mixture: Place ½ cup of the warm water into a small bowl. Quickly and continuously whisk in the xanthan gum until the mixture thickens and becomes well blended. This step helps to prevent clumping and ensures a smooth texture in the syrup.
  2. Combine and Heat Syrup Base: Pour the remaining 1 ½ cups of warm water and the Swerve brown sugar substitute into a saucepan. Heat over medium stove heat. Once the mixture is hot, whisk in the prepared xanthan gum mixture until the syrup is completely blended and smooth. Allow it to simmer gently until it reaches your preferred thickness.
  3. Add Flavor Extracts and Cool: Remove the saucepan from heat. Stir in the maple and vanilla extracts to infuse the syrup with rich flavor. Allow the syrup to cool before serving. Store any leftovers in an airtight container in the refrigerator.

Notes

  • Use warm water to help dissolve the sugar substitute and xanthan gum more effectively.
  • Xanthan gum helps thicken the syrup without adding carbs, but add slowly to avoid lumps.
  • Store the syrup in the refrigerator and use within 2 weeks for best freshness.
  • Adjust the thickness by simmering longer or adding a bit more xanthan gum mixture as desired.
  • This syrup is perfect for keto, low-carb, and diabetic-friendly diets.
