These irresistibly easy 4-ingredient date caramels offer a guilt-free indulgence, combining natural sweetness from Medjool dates with creamy almond butter and a rich chocolate coating. Perfect as a healthy treat or dessert that’s quick to make and delightfully satisfying.

Ingredients

Scale

Caramel Base

  • 1 cup Medjool Dates (pitted)
  • 2 tablespoons Almond Butter (or sunflower seed butter for nut-free option)
  • 1 tablespoon Coconut Oil (melted)

Chocolate Coating

  • 1 cup Chocolate Chips (or chocolate bar, dark chocolate preferred for richer flavor)
  • 2 teaspoons Coconut Oil (for melting chocolate)

Instructions

  1. Preparation: Line a 9×5 inch loaf pan with parchment paper to prepare for setting the caramel mixture.
  2. Soak Dates: Place 1 cup of pitted Medjool dates in hot water and soak for about 10 minutes to soften them for easier blending.
  3. Blend Together: Drain the soaked dates and add them to a blender along with 2 tablespoons almond butter and 1 tablespoon melted coconut oil. Blend until a smooth, creamy caramel mixture forms.
  4. Set the Caramel: Pour and spread the blended caramel evenly into the lined loaf pan. Place it in the freezer and allow it to freeze for 2 to 3 hours until firm.
  5. Slice the Caramels: Remove the set caramel from the freezer and slice it into 12 even squares.
  6. Melt the Chocolate: In a microwave-safe bowl, melt 1 cup of chocolate chips together with 2 teaspoons of coconut oil in short bursts, stirring until smooth and glossy.
  7. Coat the Caramels: Dip each caramel square thoroughly into the melted chocolate, then place them on a lined plate or tray to set.
  8. Set the Chocolate: Refrigerate the chocolate-coated caramels for about 1 hour, or until the chocolate hardens and sets completely.

Notes

  • For a nut-free version, substitute almond butter with sunflower seed butter.
  • Use dark chocolate for a richer, less sweet coating.
  • Store caramels in the refrigerator to maintain firmness, especially in warmer climates.
  • Can be stored in an airtight container for up to 2 weeks in the fridge.
  • Freezing helps the caramel set quickly but allow a few minutes outside the freezer before slicing for easier cutting.
