  1. Prepare the dough: In a large mixing bowl, combine the flour and salt. Create a well in the center and crack the eggs into it. Gradually mix the flour into the eggs using a fork or your fingers until a rough dough forms.
  2. Knead the dough: Transfer the dough onto a lightly floured surface and knead it thoroughly for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  3. Rest the dough: Wrap the dough in plastic wrap or cover it with a damp cloth and let it rest for at least 30 minutes to allow the gluten to relax, which makes rolling easier.
  4. Roll out the dough: Using a rolling pin, roll the rested dough out on a floured surface into a thin sheet approximately 1/16 inch (about 2 mm) thick.
  5. Cut the noodles: Lightly flour the dough sheet to prevent sticking and fold it gently. Using a sharp knife or pizza cutter, cut the dough into thin strips, approximately 1/8 inch wide, to create the noodles.
  6. Boil the noodles: Bring a large pot of salted water to a rolling boil. Add the freshly cut noodles carefully and cook them for 2-4 minutes or until they float to the surface and are tender but slightly chewy.
  7. Drain and serve: Drain the noodles in a colander and rinse briefly with warm water if desired. Serve immediately with your preferred sauce, broth, or in soups.

  • For firmer noodles, roll the dough thinner and cook a little less time.
  • Fresh noodles cook much faster than dried ones; keep an eye on them during boiling.
  • You can substitute all-purpose flour with 00 flour for a silkier texture.
