Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, and salt until well combined to ensure even leavening.
  2. Cut in butter: Using a pastry cutter or two knives, cut the cold butter into the dry mixture until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  3. Add milk: Pour in the milk gradually and stir with a fork until the dough just begins to come together. Avoid overmixing to keep biscuits tender.
  4. Shape biscuits: Turn the dough out onto a lightly floured surface and gently knead it 3–4 times. Pat or roll the dough to about 1-inch thickness and use a biscuit cutter to cut out rounds.
  5. Bake until fluffy: Arrange the biscuits on a baking sheet, close but not touching. Bake in a preheated oven at 425°F (220°C) for 12–15 minutes, or until golden brown and puffed.
