Ingredients

Scale

Vegetables

  • 6 large ripe tomatoes, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

Liquids

  • 4 cups vegetable broth
  • 1/2 cup Greek yogurt

Instructions

  1. Cook tomatoes and aromatics: In a large pot over medium heat, sauté the chopped onion and minced garlic until they are soft and fragrant, about 5 minutes. Add the chopped tomatoes and cook for another 10 minutes until the tomatoes break down and become tender.
  2. Blend until smooth: Remove the pot from heat. Using an immersion blender or transferring carefully to a regular blender, blend the mixture until smooth and creamy.
  3. Stir in yogurt: Return the blended soup to low heat if needed, then stir in the Greek yogurt gently. Heat through for 2-3 minutes without boiling to keep the yogurt from curdling. Season with salt and pepper to taste, then serve warm.

Notes

  • For a spicier version, add a pinch of chili flakes while cooking the tomatoes.
  • Use full-fat Greek yogurt for creaminess, or low-fat for a lighter version.
  • The soup can be stored in the fridge for up to 3 days.
  • Add fresh basil or oregano for additional flavor.
