Instructions

  1. Mix the Fruit and Yogurt: In a large bowl, combine the chopped strawberries, bananas, pineapples, cherries, plain Greek yogurt, honey, vanilla extract, and optional protein powder. Stir thoroughly until well blended.
  2. Shape the Bars: Spoon a couple of tablespoons of the yogurt and fruit mixture onto a parchment paper-lined baking sheet or into a bar candy mold. Insert a popsicle stick into each cluster for easy handling.
  3. Freeze the Bars: Place the baking sheet or mold in the freezer and allow the bars to freeze completely, approximately 2 hours.
  4. Melt the Chocolate: Add the semi-sweet chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15- to 30-second intervals, stirring between each interval, until the chocolate is fully melted and smooth.
  5. Dip and Decorate: Remove the frozen yogurt bars from the freezer, dip one side into the melted chocolate, then place back onto the baking sheet. Drizzle with extra melted chocolate and sprinkle crushed peanuts over the top.
  6. Set the Chocolate: Return the bars to the freezer for a few minutes to allow the chocolate coating to harden. Keep the bars stored in the freezer for up to two weeks.
