Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 1 medium head of cabbage, chopped (about 6 cups)
  • 2 cups mixed vegetables (such as carrots, celery, and green beans)
  • 6 cups beef broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Prepare the Ingredients: Chop the cabbage into bite-sized pieces, dice the onion, mince the garlic, and chop the mixed vegetables if needed.
  2. Cook Ground Beef: In a large pot over medium heat, heat the olive oil and add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  3. Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the beef. Cook until the onion is translucent and fragrant, about 3-4 minutes.
  4. Add Vegetables and Broth: Stir in the chopped cabbage, mixed vegetables, beef broth, salt, pepper, thyme, and bay leaf. Bring the soup to a boil.
  5. Simmer Soup: Reduce the heat to low and let the soup simmer uncovered for 30-40 minutes or until the cabbage and vegetables are tender.
  6. Final Taste and Serve: Remove the bay leaf, adjust seasoning with more salt and pepper if needed, and serve hot.

Notes

  • For a thicker soup, you can mash some of the cooked vegetables with a spoon before serving.
  • Feel free to substitute beef broth with vegetable broth if you prefer a lighter flavor.
  • Adding a splash of vinegar or lemon juice before serving enhances the soup’s flavor.
  • This soup can be refrigerated for up to 4 days or frozen for up to 3 months.
