Scale

Dip Ingredients

  • 16 ounces cream cheese, softened
  • 8 ounces sharp cheddar cheese
  • 2 cans (4.5 ounces each) mild chopped green chiles
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Freshly chopped cilantro, for garnish

Instructions

  1. Mix Ingredients: In a large bowl, combine the softened cream cheese, 1 cup of shredded sharp cheddar cheese, both cans of mild chopped green chiles, garlic powder, ground cumin, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated and smooth.
  2. Prepare for Baking: Spread the cheese and chile mixture evenly into a pie pan or shallow baking dish. Sprinkle the remaining shredded cheddar cheese over the top to cover the dip evenly.
  3. Bake the Dip: Place the baking dish in a preheated oven at 350˚F (175˚C). Bake for 20 minutes or until the dip is heated through and the cheese on top is fully melted and bubbly.
  4. Garnish and Serve: Remove from the oven and sprinkle freshly chopped cilantro over the top before serving warm with your choice of chips, crackers, or fresh vegetables.

Notes

  • For extra heat, substitute mild green chiles with medium or hot ones.
  • Allow the cream cheese to soften at room temperature for easier mixing.
  • Use freshly grated cheddar for better melting compared to pre-shredded cheese.
  • This dip can be prepared a few hours ahead and baked just before serving.
  • Serve with tortilla chips, sliced baguette, or vegetable sticks for dipping.
