Mascarpone Cream
- 250g mascarpone cheese
- 3 large eggs, separated
- 100g granulated sugar

- 200ml strong brewed coffee, cooled
- 150g ladyfinger biscuits
- Unsweetened cocoa powder, for dusting (optional)
- Prepare the mascarpone cream: In a large bowl, whisk the egg yolks with the sugar until thick and pale. Gently fold the mascarpone cheese into the egg yolk mixture until smooth and creamy.
- Whip egg whites: In a separate clean bowl, whisk the egg whites until stiff peaks form. Carefully fold the egg whites into the mascarpone mixture to create a light, airy cream.
- Dip ladyfingers: Quickly dip each ladyfinger biscuit into the cooled strong coffee, ensuring they are soaked but not soggy.
- Assemble the tiramisu: In a serving dish, layer half of the coffee-soaked ladyfingers, then spread half of the mascarpone cream over them. Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.
- Chill: Cover and refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
- Serve: Just before serving, dust the top generously with unsweetened cocoa powder if desired.
