Instructions

  1. Prepare the mascarpone cream: In a large bowl, whisk the egg yolks with the sugar until thick and pale. Gently fold the mascarpone cheese into the egg yolk mixture until smooth and creamy.
  2. Whip egg whites: In a separate clean bowl, whisk the egg whites until stiff peaks form. Carefully fold the egg whites into the mascarpone mixture to create a light, airy cream.
  3. Dip ladyfingers: Quickly dip each ladyfinger biscuit into the cooled strong coffee, ensuring they are soaked but not soggy.
  4. Assemble the tiramisu: In a serving dish, layer half of the coffee-soaked ladyfingers, then spread half of the mascarpone cream over them. Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.
  5. Chill: Cover and refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
  6. Serve: Just before serving, dust the top generously with unsweetened cocoa powder if desired.
