Sweetcorn fritters are a delightful and easy-to-make snack or side dish featuring sweetcorn combined with a simple batter of flour, eggs, and milk. Pan-fried until golden and crispy, these fritters are perfect for any time of the day and can be enjoyed on their own or with a dipping sauce.

Ingredients

Scale

Fritters Batter

  • 1 cup sweetcorn kernels (fresh, canned, or frozen)
  • 3/4 cup all-purpose flour
  • 1 large egg
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • Vegetable oil for frying (about 1/4 cup)

Instructions

  1. Prepare the Batter: In a mixing bowl, combine the sweetcorn kernels, flour, egg, milk, and salt. Stir well until all ingredients are fully incorporated to form a thick batter.
  2. Heat the Oil: Pour enough oil into a frying pan to cover the bottom about 1/4 inch deep. Heat the oil over medium heat until hot but not smoking, about 2-3 minutes.
  3. Fry the Fritters: Drop spoonfuls of batter carefully into the hot oil, making sure not to overcrowd the pan. Fry each fritter for about 2-3 minutes on each side or until they turn golden brown and crisp.
  4. Drain and Serve: Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm as a snack or side dish.

Notes

  • For extra flavor, add chopped herbs like chives or parsley to the batter.
  • Can be served with a dipping sauce such as sour cream, aioli, or sweet chili sauce.
  • Make sure the oil is hot enough before frying to avoid greasy fritters.
  • Leftover fritters can be reheated in a skillet to retain crispiness.
