Ingredients

Scale

For the Dough

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/4 cups warm water (about 110°F)
  • 1 teaspoon sugar
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 1 teaspoon salt

Topping

  • 34 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary (optional)
  • Coarse sea salt for sprinkling

Instructions

  1. Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5-10 minutes until it becomes frothy, indicating the yeast is active.
  2. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture along with 2 tablespoons olive oil. Mix until a sticky dough forms.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Add small amounts of flour if needed to prevent sticking.
  4. First Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
  5. Shape the Focaccia: Punch down the risen dough and transfer it to a well-oiled baking sheet or pan. Using your fingers, gently stretch and press the dough to fit the pan, creating dimples across the surface by pressing fingertips into the dough.
  6. Add Toppings: Drizzle 2 tablespoons olive oil evenly over the dough. Sprinkle minced garlic, parmesan cheese, dried rosemary if using, and coarse sea salt evenly on top.
  7. Second Rise: Cover the dough and let it rest for another 20-30 minutes to puff slightly.
  8. Bake: Preheat the oven to 425°F (220°C). Bake the focaccia for 15-20 minutes, or until golden brown and crisp on the edges.
  9. Cool and Serve: Remove from the oven and let cool slightly before slicing. Serve warm or at room temperature.

Notes

  • For extra flavor, you can add fresh herbs like rosemary or thyme to the dough or on top.
  • Use good quality Parmesan cheese for the best taste.
  • Make sure your water is not too hot, as it can kill the yeast.
  • You can substitute all-purpose flour with bread flour for a chewier texture.
  • If you want a softer crust, brush the focaccia with additional olive oil right after baking.
