  • 12 slices white sandwich bread, fresh
  • 2 tbsp butter
  • 2 garlic cloves, crushed
  • 1/8 tsp salt
  • 1/2 cup pizza sauce
  • 1/4 cup red onion, finely diced
  • 1/3 cup mushroom, finely chopped
  • 3/4 cup grated melting cheese (mix of mozzarella and tasty cheese, equal amounts)
  • 1/4 cup sliced small pepperoni

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s ready for baking the mini pizzas.
  2. Cut Bread Rounds: Use a large empty can (around 800g/28oz size) as a cutter to cut out round shapes from the white sandwich bread slices carefully.
  3. Shape Bread Cups: Gently mould each bread round into the cups of a muffin tin, shaping them to hold the toppings.
  4. Prepare Garlic Butter: Place butter, crushed garlic, and salt into a microwave-safe bowl or mug, then microwave in 30-second increments until the butter is fully melted and infused with garlic.
  5. Brush Bread Cups: Using a brush, evenly coat the inside of each bread cup with the garlic butter mixture ensuring the garlic spreads through.
  6. Add Pizza Sauce and Veggies: Spoon the pizza sauce evenly into each bread cup, then top with finely diced red onion and chopped mushrooms for added flavor and texture.
  7. Add Cheese and Pepperoni: Sprinkle the grated cheese generously over the veggies and finish with sliced small pepperoni pieces on top.
  8. Bake: Place the muffin tin in the preheated oven and bake for 10 to 15 minutes, until the cheese is melted, bubbly, and the edges of the bread turn golden brown.
