Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Filling

  • 2 cups pumpkin puree
  • 16 oz (2 packages) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9×13-inch baking pan to form an even layer.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add pumpkin puree, sugar, eggs, cinnamon, nutmeg, ginger, salt, and vanilla extract, mixing until all ingredients are thoroughly combined and smooth.
  3. Assemble and bake: Pour the pumpkin cheesecake filling over the prepared crust, spreading evenly. Bake in the preheated oven for 45-50 minutes, or until the center is set and edges are lightly golden.
  4. Cool and chill: Remove from oven and let the cheesecake bars cool to room temperature. Then refrigerate for at least 4 hours or overnight to set fully before cutting into bars and serving.

Notes

  • Use full-fat cream cheese for the creamiest texture.
  • For a spicier taste, add more cinnamon or substitute with pumpkin pie spice.
  • Ensure cream cheese is softened to avoid lumps in the filling.
  • Bars keep well covered in the refrigerator for up to 5 days.
  • These bars can be made a day ahead to save time and allow flavors to meld.
