Instructions

  1. Prepare the Chicken Marinade: In a bowl, combine soy sauce, minced garlic, lime juice, vegetable oil, brown sugar, and ground coriander. Mix well to create the marinade.
  2. Marinate the Chicken: Add the chicken strips to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to 4 hours for deeper flavor.
  3. Make the Peanut Sauce: In a separate bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, minced garlic, and chili flakes. Gradually add coconut milk or water until the sauce reaches a smooth, pourable consistency. Adjust seasoning to taste.
  4. Prepare Skewers: If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning. Thread the marinated chicken strips onto the skewers evenly.
