Ingredients

Scale

Chicken

  • 2 pounds boneless skinless chicken breasts or thighs

Sauce

  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar
  • 3 garlic cloves, minced
  • 1/2 teaspoon minced ginger
  • 1/4 teaspoon red pepper flakes

Garnish

  • Sesame seeds
  • Sliced green onions

Instructions

  1. Prepare the slurry and sauce: Combine the cornstarch and water in a small bowl to make a slurry. In a separate bowl, whisk together the soy sauce, brown sugar, ketchup, apple cider vinegar, minced garlic, the prepared cornstarch slurry, minced ginger, and red pepper flakes until thoroughly combined.
  2. Add chicken and sauce to slow cooker: Lay the boneless skinless chicken breasts or thighs in the bottom of the slow cooker in an even layer. Pour the soy sauce mixture evenly over the chicken, ensuring each piece is coated with the sauce.
  3. Slow cook the chicken: Place the lid on the slow cooker. Cook the chicken on high for 2.5 to 3 hours, or on low for 3 to 4 hours, until the chicken is fully cooked and tender enough to shred easily.
  4. Shred and combine: Remove the cooked chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the crockpot with the bourbon sauce and stir well to coat all the chicken in the flavorful sauce.
  5. Serve and garnish: Serve the shredded bourbon chicken hot, garnished with sesame seeds and sliced green onions for added flavor and texture.

Notes

  • You can use either chicken breasts or thighs depending on your preference; thighs will yield a juicier, more flavorful dish.
  • If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
  • Serve over steamed rice or with sautéed vegetables for a complete meal.
  • Adjust red pepper flakes to control the level of spiciness.
  • For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
