Instructions

  1. Brown the chicken: Heat olive oil in a heavy-bottomed skillet or Dutch oven over medium-high heat. Season the chicken thighs with salt and pepper, then place skin-side down in the hot pan. Brown the chicken thighs until golden and crispy, about 5-7 minutes per side. Remove and set aside.
  2. Sauté aromatics: In the same pan, reduce heat to medium and add the chopped onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.

  5. Simmer chicken in sauce: Return browned chicken thighs to the pan, nestling them into the sauce. Cover and simmer on low heat until the chicken is tender and cooked through, about 35-40 minutes.
  6. Finish and serve: Remove bay leaf, adjust seasoning if needed. Garnish with fresh chopped parsley and serve warm with your choice of side such as risotto, polenta, or crusty bread.
