Cheese Mixture

  • 8 oz. Cream Cheese, softened
  • 8 oz. Monterey Jack Cheese, shredded
  • 1/4 tsp. Garlic Powder
  • 1/4 Yellow Onion, diced small
  • 1 (10 oz.) Package Frozen Spinach, thawed and drained really well

Pastry & Egg Wash

  • 1 Box Puff Pastry Sheets (2 sheets)
  • 1 Egg
  • 1 Tbsp. Water

Instructions

  1. Prepare Egg Wash: In a small bowl, combine the egg and water, then beat until well mixed to create an egg wash that will give the puff pastry a beautiful golden finish.
  2. Make Cheese Mixture: In a medium bowl, mix the softened cream cheese, shredded Monterey Jack cheese, garlic powder, and diced onion thoroughly until smooth and well combined.
  3. Add Spinach: Fold the thawed and thoroughly drained spinach into the cheese mixture, stirring well to evenly distribute the spinach throughout.
  4. Prepare Puff Pastry: Unroll the puff pastry sheets onto a flat surface. Brush both sides of each sheet lightly with the prepared egg wash to help seal and add color.
  5. Spread Filling: Evenly spread the creamy spinach and cheese mixture over one side of each puff pastry sheet, leaving a small border for sealing.
  6. Roll Up: Carefully roll up the puff pastry sheets from the filled side, creating a tight log. Slice the rolls into even pieces, about 1 to 1.5 inches thick.
  7. Bake: Arrange the rolls on a baking sheet lined with parchment paper or a silicone mat. Bake in a preheated oven at 400°F (204°C) for about 20 minutes or until the puff pastry is puffy and golden brown.
