Ingredients

Scale

Base Ingredients

  • 8 oz cream cheese, softened
  • 1 cup sour cream

Vegetables & Beans

  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned or frozen corn kernels, drained

Seasonings

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Soften the cream cheese by leaving it at room temperature for about 15 minutes to make mixing easier. Drain and rinse the black beans and corn to remove excess liquid.
  2. Mix Ingredients: In a large bowl, combine the softened cream cheese and sour cream until smooth and well blended. Add the black beans, corn, and all the seasonings: cumin, chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir thoroughly to evenly distribute the flavors.
  3. Chill Dip: Cover the bowl with plastic wrap or transfer the dip to an airtight container. Refrigerate for at least 1 hour to let the flavors meld and the dip to firm up slightly.
  4. Serve: After chilling, give the dip a quick stir and serve cold alongside tortilla chips, vegetable sticks, or your preferred dippers.

Notes

  • For extra heat, add a diced jalapeño or a pinch of cayenne pepper.
  • Use fresh corn kernels in season for more sweetness and crunch.
  • This dip can be made a day ahead and stored in the refrigerator.
  • To make it vegan, substitute cream cheese and sour cream with plant-based versions.
