Ingredients

  • 1 whole head of garlic
  • 1 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves, drizzle with a bit of olive oil, wrap in foil, and roast for 30-35 minutes until the garlic is soft and golden brown.
  2. Prepare the Aioli Mixture: Once the garlic has cooled, squeeze the softened cloves out of their skins into a bowl. Add the mayonnaise, fresh lemon juice, olive oil, and salt to the roasted garlic and mix thoroughly until smooth and well combined.
  3. Chill Before Serving: Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld and the aioli to thicken slightly. Serve chilled as a dip or condiment.

Notes

  • You can adjust the amount of lemon juice and salt to your taste preference.
  • Roasting the garlic mellow out its sharpness and adds a sweet, nutty flavor.
  • This aioli keeps well in the refrigerator for up to 5 days.
  • Use a food processor or blender for a smoother texture if desired.
  • Great served with roasted vegetables, sandwiches, grilled seafood, or as a dip for fries.
