Steak
- 1 lb flank steak
- 2 cloves garlic, minced
- 1 tablespoon butter
- Salt and pepper, to taste
Orzo
- 1 cup orzo pasta
- 2 cups water or broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
- Salt and pepper, to taste
- Sear the steak: Heat a skillet over medium-high heat and add butter. Season the flank steak with salt and pepper. Add the steak to the skillet and sear for about 4-5 minutes on each side until browned and cooked to desired doneness. Remove steak from skillet and let rest.
- Cook the orzo: In a separate pot, bring 2 cups of water or broth to a boil. Add the orzo and minced garlic to the boiling liquid. Cook uncovered for 8-10 minutes, or until the orzo is tender and the liquid is mostly absorbed.
- Make the creamy orzo: Reduce the heat to low and stir in the butter, heavy cream, and Parmesan cheese into the orzo. Mix well until the cheese is melted and the mixture is creamy. Season with salt and pepper as needed.
- Slice and serve: Thinly slice the rested flank steak against the grain. Serve the sliced steak over a bed of the creamy orzo. Spoon any juices from the steak over the top for extra flavor.
Notes
- Letting the steak rest before slicing helps retain its juices for a more tender bite.
- You can substitute chicken or vegetable broth for water to add more flavor to the orzo while cooking.
- For a lighter dish, substitute half-and-half for the heavy cream.
- Add fresh herbs like parsley or thyme for extra freshness.
