Creamy Dreamy Cauliflower Soup is a comforting and velvety soup made from fresh cauliflower, potatoes, and aromatic garlic and onions.   • 3 garlic cloves, roughly chopped
  • 1 kg (2 lb) cauliflower (1 medium head), florets broken off and stalk roughly chopped
  • 8 oz (250 g) potatoes (1 large or 2 small), peeled and roughly diced
  • 1 large onion, peeled and roughly chopped

  • 2 cups milk (any type – dairy, non-dairy, full fat or low fat)
  • 2 cups chicken broth or stock

  • Salt and pepper to taste
  • Fresh thyme (highly recommended)
  • Cream and/or olive oil, to drizzle (optional)

Instructions

  1. Combine Ingredients: Place all soup ingredients except salt and pepper — garlic, cauliflower florets and stalk, potatoes, onion, milk, and chicken broth — into a large pot. Set over high heat and bring to a boil.
  2. Simmer Soup: Once boiling, reduce the heat to medium and let the soup simmer uncovered for 10 to 15 minutes, or until the cauliflower becomes very soft and easily pierced with a fork.
  3. Blend Soup: Using a handheld immersion blender, carefully blend the soup directly in the pot until very smooth and creamy. This step ensures a velvety texture without lumps.
  4. Season to Taste: Add salt and pepper to taste. If the soup is too thick, stir in additional milk, water, or stock to reach your preferred consistency. Conversely, if you want a thicker soup, allow it to simmer longer, stirring occasionally, but monitor the salt level closely.
  5. Serve and Garnish: Ladle the soup into bowls and garnish with fresh thyme leaves. Drizzle with cream and/or olive oil if desired for extra richness and flavor.

Notes

  • You can customize the milk type based on dietary preference: dairy, almond, oat, or soy milk all work well.
  • For a vegan version, substitute chicken broth with vegetable broth and omit cream or use a plant-based alternative.
  • Use fresh thyme for the best aromatic experience, but dried thyme can also be added during the simmering step if fresh is unavailable.
  • If you prefer a chunkier texture, blend only half the soup and leave the rest in chunks.
