Ingredients

Scale

Vegetables

  • 2 medium sweet potatoes, peeled and diced
  • 1 ripe avocado, sliced
  • 1 lime, cut into wedges

Other Ingredients

  • 4 small tortillas (corn or flour)
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Roast the sweet potatoes: Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil and a pinch of salt. Spread them evenly on a baking sheet and roast for 25-30 minutes, turning halfway through, until tender and slightly caramelized.
  2. Warm the tortillas: While the sweet potatoes roast, warm the tortillas by heating each one in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and warm in the oven for 5 minutes.
  3. Assemble the tacos: Lay the warmed tortillas flat and evenly distribute the roasted sweet potatoes among them. Top each with slices of avocado and a squeeze of fresh lime juice for added brightness. Season with extra salt if desired.

Notes

  • Use corn tortillas for a gluten-free option.
  • Add chopped fresh cilantro or a dash of smoked paprika for extra flavor.
  • These tacos are best served immediately to enjoy the contrast between warm sweet potatoes and creamy avocado.
  • Leftover roasted sweet potatoes can be stored in the refrigerator for up to 3 days.
