Scale

Wrap Ingredients

  • 1 cup Cottage cheese
  • 2 large Eggs
  • 2 large Egg whites
  • 1 cup Mozzarella cheese (shredded)
  • 1/4 cup Wholesome Yum Blanched Almond Flour (for texture)
  • 1/2 tsp Italian seasoning (optional)
  • 1/4 tsp Garlic powder (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400 degrees F (204 degrees C) and line a large baking sheet with parchment paper to prevent sticking.
  2. Prepare the batter: In a blender or food processor, combine the cottage cheese, whole eggs, egg whites, shredded mozzarella, almond flour, and optional seasonings. Blend until the mixture is smooth and fully incorporated.
  3. Spread the batter: Pour the batter onto the prepared baking sheet, spreading it thinly and evenly to about 1/8 inch thickness, extending to the edges for a full sheet.
  4. Bake the wraps: Place the baking sheet in the oven and bake for 8-10 minutes until the wraps are semi-firm. For a more golden and firmer texture, bake up to 15 minutes.
  5. Cool and cut: Remove the wraps from the oven and let them cool for at least 15 minutes to set. Then carefully slide the parchment paper onto a cutting board and cut the wrap sheet into 4 rectangular pieces.
  6. Fill and roll: Add your desired fillings to one end of each rectangle and gently roll up the wraps to serve as a healthy, tasty vessel for your favorite sandwich ingredients.

Notes

  • Ensure the batter is spread evenly for consistent thickness and even baking.
  • Cooling the wraps before cutting helps maintain their shape and prevents tearing.
  • You can customize the seasoning according to your taste preferences.
  • Use fillings such as turkey, veggies, hummus, or any preferred sandwich ingredients.
  • The wraps can be stored wrapped tightly in the fridge for up to 3 days.
