Grains
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
Vegetables
- 2 cups mixed vegetables (such as bell peppers, zucchini, carrots, and cherry tomatoes), chopped

- Cook Quinoa: Rinse the quinoa thoroughly under cold water to remove its natural coating, which can be bitter. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 15 minutes or until all the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Roast Vegetables: Preheat your oven to 425°F (220°C). Toss the chopped vegetables with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper. Roast for 20-25 minutes, turning halfway through, until tender and slightly caramelized.
- Assemble and Drizzle Dressing: In a large bowl, combine the cooked quinoa, roasted vegetables, and chickpeas. In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of fresh lemon juice, and a pinch of salt and pepper. Drizzle the dressing over the bowl mixture and toss gently to combine evenly. Serve warm or at room temperature.
