- 1 medium onion, diced
- 2 cloves garlic, minced

- Sauté Onion and Garlic: Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté for about 5-7 minutes until the onion is soft and translucent, releasing a fragrant aroma.
- Add Tomatoes and Broth: Stir in the chopped tomatoes and vegetable broth. Increase the heat to bring the mixture to a simmer. Let it cook uncovered for 20-25 minutes, allowing the tomatoes to soften and the flavors to meld.
- Blend the Soup: Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the mixture in batches to a blender and blend until creamy.
- Season and Add Cream: Return the blended soup to the pot if needed. Season with salt and freshly ground black pepper to taste. Stir in the heavy cream if using, warming the soup gently without boiling to maintain the cream’s texture.
