Ingredients

Scale

For the Sugar Cookie Dough

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the Cinnamon Sugar Swirl

  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon

For the Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In a large bowl, cream together the softened butter and white sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually blend in the dry ingredients until fully combined, forming a soft dough.
  2. Roll and Spread Cinnamon Mixture: Roll out the sugar cookie dough on a lightly floured surface into a rectangle approximately 12×8 inches. Brush the melted butter evenly over the dough. In a small bowl, combine brown sugar and cinnamon, then sprinkle it evenly on top of the buttered dough.
  3. Form the Cookie Roll: Starting from the longer edge, carefully roll the dough into a tight log. Slice the roll into 1/2-inch thick cookies, placing them spaced apart onto an ungreased baking sheet.
  4. Bake the Cookies: Preheat the oven to 350°F (175°C). Bake the cinnamon roll cookies for 10 to 12 minutes, or until the edges are golden but the centers remain soft. Remove from oven and let cool completely on wire racks.
  5. Prepare and Drizzle Icing: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the cooled cookies for a sweet finishing touch.

Notes

  • For softer cookies, avoid overbaking; remove when edges are lightly browned.
  • Use room temperature butter for easier dough mixing and rolling.
  • Use a sharp knife to slice the cookie roll to prevent squishing the dough.
  • Store cookies in an airtight container at room temperature for up to 5 days.
