Instructions

  1. Prepare the dough: In a large mixing bowl, cream the softened butter and powdered sugar together until pale and fluffy using an electric mixer or wooden spoon for about 3-5 minutes. Add the vanilla extract and mix well.
  2. Combine dry ingredients: Sift the plain flour and cornstarch together into the butter mixture. Gently fold the dry ingredients into the wet ingredients using a spatula until a soft dough forms. Avoid over-mixing to keep the cookies tender.
  3. Shape the cookies: Roll the dough into small balls, approximately 2.5 cm (1 inch) in diameter. Place them spaced evenly on a baking tray lined with baking paper. Flatten each ball slightly with the base of a glass or your fingers to about 1 cm thickness.
