Ingredients

Scale

Fruit and Wet Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup (115g) butter, melted or 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 3/4 cups (220g) all-purpose flour
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (150g) granulated sugar

Add-ins

  • 1/2 cup (125g) creamy peanut butter
  • 1/2 cup (90g) semi-sweet chocolate chips

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray to ensure the bread doesn’t stick during baking.
  2. Mash bananas and mix wet ingredients: In a large bowl, mash the ripe bananas until smooth. Add melted butter (or oil), sugar, eggs, and vanilla extract. Mix thoroughly until the ingredients are fully combined and smooth.
  3. Combine dry ingredients: In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt. This ensures even distribution of leavening and cocoa throughout the batter.
  4. Mix dry into wet ingredients: Gradually add the dry ingredients into the wet banana mixture, stirring just until incorporated. Be careful not to overmix to keep the bread tender.
  5. Fold in peanut butter and chocolate chips: Gently fold in the creamy peanut butter and chocolate chips, distributing them evenly throughout the batter for bursts of flavor.
  6. Pour and bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  7. Cool and slice: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer the loaf to a wire rack to cool completely before slicing. This prevents it from crumbling and helps flavors to set.

Notes

  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • Use very ripe bananas with brown spots for the best natural sweetness and moisture.
  • Store leftover banana bread in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • You can add chopped nuts like walnuts or pecans for extra texture.
  • To enhance peanut butter flavor, swirl some peanut butter on top of the batter before baking.
