Ingredients

Scale

Vegetables

  • 1 medium head of cauliflower, cut into florets

Dairy

  • 2 cups shredded cheddar cheese
  • 1 cup milk (whole or 2%)
  • 2 tablespoons butter

Instructions

  1. Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 8-10 minutes, or until tender but not mushy. Drain well and set aside.
  2. Prepare the Cheese Sauce: In a saucepan over medium heat, melt the butter. Slowly whisk in the milk and heat until warm. Add the shredded cheddar cheese gradually while stirring continuously to form a smooth cheese sauce.
  3. Combine Cauliflower and Cheese Sauce: Add the cooked cauliflower florets to the cheese sauce and gently stir to coat all pieces evenly with the sauce. Heat through for a couple of minutes until everything is hot and well combined.

Notes

  • For a richer sauce, you can add a splash of heavy cream or use half-and-half instead of milk.
  • Season with salt, pepper, and a pinch of nutmeg for extra flavor.
  • You can also add garlic powder or a teaspoon of mustard powder to the cheese sauce for more depth.
  • This recipe can be baked after preparing for a crispy top layer by transferring to a baking dish, sprinkling extra cheese, and broiling for 3-5 minutes.
