Ingredients

Scale

Brownie Cookies

  • 1 box brownie mix (about 18 oz)
  • Ingredients required for brownie mix (usually eggs, oil, and water as per package instructions)

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons butter, softened

Chocolate Coating

  • 1 1/2 cups semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon vegetable oil or shortening (optional, for smoother melting)

Instructions

  1. Prepare Brownie Cookies: Preheat your oven to 350°F (175°C). Prepare the brownie mix as directed on the package, combining the brownie mix with required eggs, oil, and water. Drop rounded tablespoons of the batter onto a parchment-lined baking sheet to form cookie-sized portions. Bake for 10-12 minutes until edges are set but centers remain soft. Let cookies cool completely on a wire rack.
  2. Make Peanut Butter Filling: In a mixing bowl, combine creamy peanut butter, powdered sugar, and softened butter. Mix until smooth and creamy. Using your hands or a small cookie scoop, form the filling into small balls about 1 inch in diameter. Chill the peanut butter balls in the refrigerator for 30 minutes until firm.
  3. Assemble Buckeye Cookies: Carefully cut a small well in the center of each cooled brownie cookie. Alternatively, you can sandwich two smaller cookies around the peanut butter filling. Place one peanut butter ball inside each well or between cookie halves.
  4. Melt Chocolate coating: In a microwave-safe bowl, melt the chocolate chips with vegetable oil in 20-30 second bursts, stirring well after each until smooth. Alternatively, use a double boiler on the stovetop to melt the chocolate gently.
  5. Dip and Set: Using a fork or dipping tool, dip the assembled brownie cookies with peanut butter filling into the melted chocolate, covering all exposed peanut butter. Place the coated cookies on a parchment-lined tray. Allow chocolate to set at room temperature or refrigerate for 15-20 minutes until firm.

Notes

  • Use creamy peanut butter for a smooth filling that contrasts nicely with the fudgy brownie texture.
  • Ensure brownie cookies are completely cool before adding peanut butter filling to prevent melting and sliding.
  • For easier dipping, thin the melted chocolate with a small amount of vegetable oil or shortening.
  • Store finished Buckeye Brownie Cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
