Chicken
- 4 bone-in, skin-on chicken thighs
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
Potatoes
- 1.5 pounds baby potatoes, halved
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
Topping
- 4 ounces Boursin cheese (garlic & herb flavor)
- 2 cloves garlic, minced
- Season the chicken and potatoes: Preheat your oven to 400°F (200°C). In a bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Season the chicken thighs generously on both sides with salt and black pepper.
- Bake the chicken and potatoes: Arrange the chicken thighs and potatoes in a single layer on a large baking sheet or roasting pan. Bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender when pierced with a fork.
- Add the Boursin cheese topping: Remove the pan from the oven. While the chicken and potatoes are still hot, evenly dollop the Boursin cheese over the chicken pieces. The residual heat will slightly melt the cheese, creating a creamy, flavorful topping. Optionally, sprinkle the minced garlic over the cheese for extra aroma and taste.
- Serve immediately: Plate the chicken and potatoes, allowing the cheese topping to melt further. Enjoy your creamy, herbaceous Boursin Chicken and Potatoes warm for the best taste and texture.
Notes
- You can substitute baby Yukon Gold or red potatoes for baby potatoes if needed.
- To ensure even cooking, try to cut potatoes into similar sizes.
- For a crispier skin on the chicken, broil for the last 2-3 minutes, watching carefully to prevent burning.
- Boursin cheese comes in various flavors; garlic & herb is recommended for this dish.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
