Filling Ingredients

  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 3/4 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup bourbon
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Crust

  • 1 pre-made 9-inch pie crust (or homemade equivalent)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking when the pie filling is prepared.
  2. Prepare Filling: In a large mixing bowl, whisk together the pumpkin puree, eggs, brown sugar, heavy cream, bourbon, cinnamon, ginger, nutmeg, cloves, and salt until the mixture is smooth and evenly combined.
  3. Assemble Pie: Place the pie crust in a 9-inch pie dish, crimping the edges if desired. Pour the pumpkin filling into the crust, spreading it evenly.
  4. Bake Pie: Bake the pie in the preheated oven for 50 to 60 minutes, or until the filling is set and a knife inserted near the center comes out clean. If the crust edges begin to brown too quickly, cover them with foil or a pie shield.
  5. Cool: Remove the pie from the oven and let it cool completely on a wire rack to allow the filling to set fully before slicing and serving.

Notes

  • Use canned pumpkin puree for the best consistency and flavor.
  • Adjust the amount of bourbon according to your preference; the alcohol cooks off leaving the flavor behind.
  • Cover the crust edges with foil partway through baking to prevent over-browning.
  • Allow the pie to cool completely to ensure clean slices.
  • Serve with whipped cream for an extra indulgent treat.
