Tart Crust

  • 1 1/2 cups fresh blueberries, washed and dried

Instructions

  1. Prepare the Tart Crust: In a mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs. Add the egg yolk and ice water, mixing gently until dough just comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Bake the Crust: Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim excess. Prick the bottom with a fork to prevent bubbling. Line with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment, and bake another 8-10 minutes until golden. Let cool completely.
  3. Make the Ganache: Place chopped chocolate in a heatproof bowl. In a small saucepan, heat the cream until it just begins to simmer. Pour the hot cream over the chocolate and let sit for 2 minutes to soften. Stir gently until smooth and glossy. Stir in the softened butter until fully incorporated.
  4. Fill the Tart: Pour the ganache into the cooled tart crust, spreading evenly. Refrigerate the tart for at least 2 hours to set the filling firmly.
  5. Top with Blueberries: Once the ganache has set, arrange fresh blueberries evenly over the surface of the tart. Serve chilled or at room temperature.
