Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it to prevent sticking.
  2. Prepare the cream cheese filling: In a small bowl, beat the softened cream cheese with 2 tablespoons of sugar until smooth and creamy. Set aside.
  3. Mix wet ingredients: In a large bowl, combine the mashed bananas, melted butter, sugar, egg, and vanilla extract. Mix until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Form the batter: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix to keep muffins tender.
  6. Assemble the muffins: Spoon a small amount of banana batter into each muffin cup, add a dollop of the cream cheese mixture in the center, then cover with more banana batter to fill the cups about 3/4 full.
