Steak and Marinade
- 1.5–2 lbs flank steak
- ½ cup olive oil
- ½ cup balsamic vinegar
- ½ teaspoon salt
- ½ teaspoon fresh cracked black pepper
- 2 green onions, roughly chopped
- 2 tablespoons brown sugar (preferably dark)
Blue Cheese Crust
- 1 cup blue cheese, crumbled
- 2 tablespoons panko bread crumbs
- ½ tablespoon butter
- Prepare the Marinade: In a 9×13” baking dish, whisk together olive oil, balsamic vinegar, salt, pepper, chopped green onions, and brown sugar until well combined to create the marinade.
- Score and Marinate the Steak: Score the top of the flank steak in 1-inch sections to help the marinade penetrate the meat. Place the steak in the dish, turning to coat with marinade. Let it sit 30–45 minutes per side, spooning marinade into the cuts to enhance flavor.
- Preheat Broiler: Set the oven to high broil and position the oven rack near the top but without touching the meat to ensure intense, direct heat for broiling.
- Broil the Steak: Place the flank steak on a broiler pan scored side up. Broil for 3 minutes, then flip and broil the other side for another 3 minutes to sear the exterior evenly.
- Prepare Topping: Melt butter and mix it with panko bread crumbs to create a crispy topping. Have the crumbled blue cheese ready for assembling the crust.
- Apply the Blue Cheese Crust: Flip the steak again so the scored side faces up. Press the blue cheese firmly into the scored sections on the steak, then evenly sprinkle the buttered panko crumbs over the top.
- Final Broil: Return the steak to the broiler and cook for an additional 5 minutes, or until the blue cheese melts, bubbles, and the panko crumbs are golden brown and crisp.
- Rest and Serve: Remove the steak from the oven and rest for 10–15 minutes to allow the juices to redistribute. Slice thinly against the grain and serve warm for the best texture and flavor.
Notes
- Scoring the steak allows the marinade and cheese mixture to penetrate more deeply, enhancing flavor.
- Keep an eye on the steak during broiling to prevent burning the cheese topping.
- Resting the steak before slicing ensures juiciness and tender slices.
- Use dark brown sugar for a richer marinade flavor.
- The panko and butter mixture adds a delightful crunch to complement the creamy blue cheese.
